Ingredients

  • 3 tablespoons vegetable or avocado oil
  • 1 medium potato, small diced (1 ½ to 2 cups)
  • 2 medium carrots, small diced (1 ½ to 2 cups)
  • Salt to taste
  • 1 teaspoon turmeric powder
  • 1 cup fresh green beans, small diced
  • 1 green bell pepper, small diced
  • 2 cups cauliflower, florets separated
  • 1 teaspoon red chili powder
  • 1 ½ tablespoons Bina’s Feisty Tiger Spice Blend
  • 3 tablespoons fresh-squeezed lime juice
  • ¼ cup fresh cilantro for garnish

Instructions

  1. Heat the oil on high heat in a large saute pan for about 30 seconds to a minute.
  2. Once the oil is hot, add the potatoes and carrots, and stir. Add the salt and turmeric powder. Cover the pan, and cook the potatoes and carrots for about 3 minutes.
  3. Add the green beans, bell pepper, and cauliflower, and stir. Add the red chili powder and Bina’s Feisty Tiger Spice Blend, and stir everything together. Cover the pan, and cook for another 6 to 7 minutes until the vegetables are al dente.
  4. Squeeze lime juice over the mixture, stir, serve hot, and garnish with cilantro. Serve with chapattis, naan, rice and lentils, or yogurt.
