I enjoy going to the farmer’s market for beautiful, fresh veggies. It’s like the bounty of the earth! This vegetable dish is quick and easy to make. This vegetable recipe is very versatile and makes an excellent accompaniment to any of your main protein dishes or can be added to your favorite “bowls” you make at home, which are very popular.
My Feisty Tiger Spice Blend adds a burst of bittersweetness, nuttiness, and warmth with onion seeds, cumin, fennel, fenugreek, and mustard. Feisty Tiger can also be added to stir-fried or roasted veggies or your favorite meatloaf or pot roast recipe. Make a dry or wet rub for beef, lamb, chicken, or fish, marinate shellfish or any meats, sprinkle on stews, soups, potatoes, eggs, and savory salads, or mix into plain yogurt to make a delicious dip for a raw veggie tray.
Heat the oil on high heat in a large saute pan for about 30 seconds to a minute.
Once the oil is hot, add the potatoes and carrots, and stir. Add the salt and turmeric powder. Cover the pan, and cook the potatoes and carrots for about 3 minutes.
Add the green beans, bell pepper, and cauliflower, and stir. Add the red chili powder and Bina’s Feisty Tiger Spice Blend, and stir everything together. Cover the pan, and cook for another 6 to 7 minutes until the vegetables are al dente.
Squeeze lime juice over the mixture, stir, serve hot, and garnish with cilantro. Serve with chapattis, naan, rice and lentils, or yogurt.
