After a long day at work, something quick, easy, delicious, and nutritious is appealing. I happened to have bison meat in my fridge defrosting, and I had just visited the local farmers’ market where I bought roasted poblanos and fresh corn. This is where my inspiration came from since I like to shop for seasonal and local things for all my recipe creations.
I browned the bison meat in a pan with onions and then added the poblanos and corn. And for extra flavor I put in a tablespoon of my own Feisty Tiger spice blend to elevate the flavor for you to salivate and enjoy. Add cheese and salsa and roll into a burrito. Voila! We were biting into the burritos within 20 minutes.
Ingredients
1 ¼ pound ground bison
¾ of a large onion, chopped (1 cup chopped onions)
2 ears corn on the cob, grilled, with kernels removed
4 poblano peppers, grilled, with skins and seeds removed, diced
Soft corn or flour tortillas
Your choice of cheese, such as shredded Mexican cheese or cojito
Your choice of toppings, such as sour cream, salsa, and fresh cilantro
Instructions
Put large saute pan on high heat.
When the pan is hot, add ghee or oil, and let it get hot.
When the oil is hot, add onions, ground bison, and garlic, and cook for 10 to 12 minutes or until done.
Add Feisty Tiger Spice Blend and salt, and then stir to mix.
Add corn and poblano peppers to the pan, and stir. Heat for a few more minutes, and then take the pan off the heat and cover it.
Warm the tortillas.
Put a few tablespoons of bison mixture and cheese in the center of a tortilla, fold the ends in, and wrap into a burrito. Continue with the rest of the mixture and tortillas.
Serve burritos with condiments such as sour cream, salsa, and fresh cilantro.
